Kitchen exhaust cleaning often referred to as (hood and duct cleaning) is required by law for all commercial cooking establishments such as restaurants,hospitals, hotels, employee cafeterias and any food-service locations that have a commercial kitchen exhaust (hood and ductwork) over their cooking equipment to exhaust smoke, grease-laden vapors and fumes out of the building. These exhaust gases leave a grease residue on the inside of the ductwork.

How often should my entire kitchen exhaust system be cleaned?
According to NFPA-96 Standard (Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations) the following schedule shall be followed:

As per local codes, grease filters should be maintained by trained and certified restaurant personnel on a daily or weekly basis, depending on cooking volue. Most cooking establishments don't have the available time, space or trained personnel to provide this service. That is where we come in. On top of your quarterly kitchen exhaust cleaning, we offer a grease filter exchange program. Clean filters will prevent heavy buildup of grease throughout your entire exhaust system. It will also help you comply with your local health department codes and ensure a clean looking kitchen exhaust system. Our trained technicians, will remove and replace your dirty grease filters as often as necessary. We stock filters of every make, model and material in all sizes, to ensure that you get back the same quality filters as the ones you own. All of our filters are UL listed, stamped and approved to be used in commercial cooking establishments.
Maintenance of the Fire Suppression Systems & Fire Extinguishers shall be made by properly trained, qualified and certified person (s) acceptable to the authority having jurisdictions at least every six months. Trained technicians, will carefully inspect, test, tag and certify your Fire Suppression System and Fire Extinguishers, to make sure that all of your fire protection products are up to date and in working condition in case of an unwanted fire.
Fire Extinguishing equipment shall include both automatic fire extinguishing systems as primary protection and portable fire extinguishers as secondary backup. A restaurant fire suppression system is designed to provide fire protection for restaurant cooking appliances, exhaust hoods, and ducts as defined by the National Fire Protection Association NFPA 17A – Standard for Wet Chemical Extinguishing Systems, and NFPA 96 – Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations. These systems are pre-engineered and consist of mechanical and electrical components for installation by an authorized Distributor.
Portable fire extinguishers are intended as a first line of defense to cope with fires of limited size. They are needed even if the property is equipped with automatic sprinklers, water standpipe and hose, or other fixed protection equipment. Every facility (commercial, industrial, office, etc) is required to have fire extinguishers regardless of any other type of fire protection provided.
Due to the various classes of fire (A, B, C, D and K), it is necessary to provide the correct type of fire extinguisher for the site-specific hazard. It is also necessary for extinguishers to be positioned within the travel distance guidelines for the hazard and its potential severity. Various types of agents are used to fight specific types of fires. These include Water, Dry Chemical, CO2, Purple K, Metal-X, FE36, etc. Each of these carries a different rating and has different characteristics that are specific to the class of fire it is used to protect. All system inspections and installations are done by a licensed and certified master fire suppression system contractor which are hired as sub contractors by Prestigious Maintenance Inc.
